Chili peppers

This is one of the true Italian fast foods. It’s very quick to prepare, but so flavorful. The Italian name of this dish already lists all the main ingredients, garlic, olive oil and chili peppers.

Spaghetti preparation:

About 100-150 grams of spaghetti per person
Bring a pot of water to boil, add salt abundantly and a tablespoon of oil (does not need to be olive oil). Put the spaghetti in the boiling water and boil according to the time written on the package, while checking that they don’t get too soft. Drain when ready.
You’ll need them really “al dente” because the heat of the frying pan will extend the cooking time. Also timing is important, you want to have the spaghetti ready at the same time the sauce is ready.

Sauce preparation:

5 Garlic cloves
Olive oil
Hot chilli peppers – to taste
Salt
Pepper

Peel and halve the garlic and take out the inner sprout with its skin (for better digestion). Smash the garlic halves. Cut the chillies in small bits.
Pour an abundant amount of olive oil in a frying pan, add garlic and chillies and fry at medium-low flame till golden. Salt and pepper as you wish. Then add the spaghetti and stir until nicely mixed. Enjoy!

Variation: Omar’s aglio, olio, peperoncino e cipolla.

Extra ingredients:

1  small onion or 1/2 a large
1  lemon (juice)
1 teaspoon sugar

Preparation:

Cut the onion into long, thin stripes and add into the frying pan after the garlic has turned golden. Fry the onion until soft, add the lemon juice and the sugar (before the onion is soft). Careful, don’t add too much lemon juice, at the end there shouldn’t be any moisture left, just oil. Salt and pepper as you wish.
Then add the spaghetti and stir until nicely mixed.
